Recipe of the Month - Sour Cream Chicken

Here is the recipe for the month of March! This is a huge family favorite and is super simple to make and only takes a few ingredients.

Sour Cream Chicken
4-6 Chicken Breasts
1 Can Mushroom Soup
1 Cup of Sour Cream
1/2 - 1 whole package of onion soup mix

Mix all the ingredients in a baking dish with the chicken and bake at 350 degrees for about one hour.

We usually make this in a small portion, so we use 1/2 a can of soup, a shake of the onion soup mix and then a few table spoons of sour cream - just to coat the chicken and give it something to bake in.

Serve with pasta or rice and a nice side of veggies. You can also put rice in with the chicken as well as some frozen veggies and it will come out like a casserole.

Any praying people out there???

Here's just a little update on our family and our living situation. Phil has been working in Grande Cache for seven weeks now and has been living in a coworkers basement. At the end of this week he will be moving into a house shared by 3 other guys from work. This is good in that he will have his own space as the basement was ok, but it just happened to be their family room and they were wanting to do some renos. Now he will have his own space and won't feel like he is intruding.

We still have not listed our house yet as there really are only a handful of house to buy in Grande Cache (either cheap, needing a lot of work or really expensive). The houses in the middle seem to get snatched up real quick. So, we are trying to figure out what we need to do. Do we list and hope that when (if) we sell that something will be available in Grande Cache, or do we wait until there are more houses on the market in GC before we list here? We thought about renting our place out and renting in GC but there aren't that many places to rent and they go just as fast as the houses and they tend to be a little expensive. The only other option is to just stay here, but that means that Phil will still be commuting every week and all these travel costs and his living costs in GC are adding up pretty quick. I only have 4 more weeks of work and then I will be on mat leave, which means that there will be much less income. Sigh... what are we going to do?

So, if any of you are a praying person, if you wouldn't mind saying a prayer for us for wisdom, we'd really appreciate it. I firmly believe that God has a reason for the way that things are happening, but some days it makes it really hard to trust and have patience, especially when the days are long and I am all alone! Knowing that another baby is going to be on the way doesn't make things easier either! I'm trying not to stress out and take things day by day, but sometimes it's pretty tough!

Also, about 6 or 7 weeks ago my foot started to hurt - right on the joint of my big toe. I have seen two doctors and neither of them know what's going on. Being pregnant they can't really prescribe anything so I am finding it super hard to walk properly and my foot just really hurts - so a prayer for healing might be alright too! Just thought I'd throw that out!!!

My Little Princess, er I mean Terror :)

Well, we must be getting close to those terrible twos. My little princess hasn't been all that princessy lately! In fact she is challenging me and pushing every button possible (some buttons I didn't even realize that I had!). It has been super hard to be a solo parent lately too and not have backup or someone to witness these events (or meltdowns!).

We went shopping the other day and she was sitting in the cart all angelic and waving and saying hi to everyone that walks by. When she really wants something, and I say, "what do you say?" she replies with, "PPPEEEEEZZZZZEE!". Her new favorite thing is to watch tv. I don't like her watching a lot of tv and really limit how much and what it is that she watches. We have purchased a few DVD's (her favorite being Little Einstein's movies). Whenever we come home or are in the living room she always asks for "wewe", which translated is movie or tv depending on her mood. If she wants a movie she will usually do something from the movie - for instance, the Einstein movies the little kids in it pat their legs to get their rocket to go and they say, "pat, pat, pat", so that's what she does when she wants that movie. The other day the movie finished and we were going to have supper. I told her it was supper time and I was going to turn off the tv. She started crying and screaming and screaming and crying and asking for her "wewe". These last few days this happens when I turn off the tv for anything. It's tough, because to make life easy I could just have the tv on all day and she would be completely happy, but I know that is not the right thing to do, but it saves me from having to listen to her whining and crying and screaming. This parenting thing is not easy and I am learning to be firm in my decision and when I say no or turn off the tv I really mean it. I know I still have a lot to learn and I know that there will be ups and downs. I just wish some days were easier. I am learning to take a few deep breaths, talk calmly and then walk away. Hopefully we can learn together and work this through together.

Here she is all cute and lovely... I should attempt to take a picture at some point when she is not being so angelic!

Feeling like a perfectly roasted hot dog

Do you ever feel like you are a perfectly roasted hot dog? Here's what I mean... for those of you who have been pregnant in the past, you know that you sleep on your side and they recommend that you sleep on your left side because on the right side is your sciatic nerve and it is the main nerve from you to the baby, or something like that. I am a tummy and right side sleeper, so sleeping on my left side does not happen naturally or comfortably. Plus there is the fact that everything inside of you is squished and other parts are expanded and sleeping can be really difficult - not to mention the fact that your bladder feels like the size of a pea - TMI, sorry. So the other night as I was laying in bed, pillows between my knees, around my tummy and blankets propping up my back I felt like it was the beginning stages of roasting the perfect hot dog. I fell asleep and about 2-3 hours later, awoke to go to the washroom and carefully positioned myself on my other side, so that I could roast that side. Then 2-3 hours later, bathroom and reposition again to the other. Ah, the joys of being pregnant! When I woke up in the morning I felt like a perfectly roasted hot dog. And thinking about that made me want to go camping with a nice big fire and roasted hot dogs and S'mores. Oh summer, when will you arrive?

Thanks to all who posted and gave me such nice comments on my previous post. I wasn't looking for compliments, but boy do they sure feel nice! It's hard to believe that this pregnancy is quickly coming to a close.

Just what the Dr. ordered!

So I was finally able to take some time for myself and go and get my hair cut. These days it's the little things that make me feel good. I was even able to pick up a few little things at Walmart the other day - just for me (I love my new lip gloss!!).

Here's where we are with baby #2 - 30 weeks!

Boy do I look big. A friend comment the other day that I am perfectly round and she just wants to poke me with a pin and pop the balloon! I thought it was funny. I am nice and round!!! :)

So much accomplished!

Thanks Mom for coming and spending the week!!!

We got so much done. We were able to scrub the kitchen from top to bottom. Who knew a kitchen could collect so much grease and dirt? It's crazy, but totally worth the clean up! We also got two of the three bathrooms scrubbed out and I have never used so many Mr. Clean Magic Erasers in my life. My walls have never been so clean before. We got all the floors vacuumed and the basement got organized and cleaned up! My house looks good, smells good and feels good. Hopefully we can keep it clean while we wait to list it and then hopefully it sells!

Just a few little touch ups here and there and lots more things to pack up. We did manage to pack up a lot of the kitchen stuff and some of Makayla's toys. It feels good to have things organized and sorted and a little under control.

Five more weeks of work and then I will have some time to finish up the packing and cleaning. The end is getting closer and the mixed emotions are getting stronger. Can't wait to see how things are going to turn out!

Feeling like the only one...

I'm not sure if it's a second pregnancy thing, but apparently I'm getting large. Someone at church stopped me last week and told me that I was starting to get pretty big and that my face was filling out. They then quickly said that it looked good on me. I really don't know how to take those comments. I really have issues putting on weight, even though you are supposed to when you're pregnant, but really, do people have to make comments about it. I mean we're already hormonal and emotional, the last thing we want is for someone to tel us that we look fat.

I just read a post from another girl who is expecting her second a few weeks before me and she has had some of the same comments - some people even asking her if she is having twins. So I don't feel that bad.

I'll admit this time around the weight has crept up on my faster than the first time, but this time around I haven't been at the gym a few times a week and I have been solo parenting, so at the end of the day I don't feel much like exercising for 30 minutes. Makayla and I have however been getting out for walks because the weather has been so incredible and I think that spring may just be around the bend!

11 more weeks to go - I guess I can live with a few more extra pounds, but I am feeling pretty determined to get back into shape in 3 months or so (at least start getting back into shape. Walks or even runs when I can and Phil has some crazy workout designed for me to do. So, I am looking forward to #2 joining our family and getting back to an active lifestyle with the family!). Especially after watching the Olympics I really want to get into shape. Those athletes are in amazing shape and they are so inspirational. I may not be in Olympic shape, but I'm determined to try and get back to where I was before this second pregnancy! Wish me luck!

Family Visit!

I am so excited that my mom is coming to visit us today! She will be here in a few hours! She is coming to help me with some packing of our goods as well as to help me do some cleaning and some touch up stuff to our house so we can get it ready to put up for sale. We are hoping to be able to get things ready around here so we can list our house in the next month or so and be able to sell it before the baby comes and then move after the baby is born. Not complicated at all!

It will be nice to have an extra pair of hands for a whole week. I'm actually super lucky for two weeks because Phil is home now for a few days and then my mom is here for a week and then Phil is home for a few more days! Yeah me for having some help. I'll actually be able to get some things around the house done as well as work as well as personal. You know that brow wax I mentioned earlier - well it's actually booked and gonna happen!

I am so thankful to have some extra help as I know that both Makayla and I have been feeling a little bored of each other and getting out to do things isn't always an option. So being at home most days makes it tough on both of us.

So, thanks mom and Phil for being around for these next few weeks! I'm really looking forward to it!
